Dabei orientieren sich die japanischen Destillerien doch im Wesentlichen am großen Vorbild Scotch– woher kommt also der Hype um die Nippon Whiskys?\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eVor allem aus ihrer Perfektion – Japans Master Distiller mögen sich die Schotten zum Vorbild nehmen, sind jedoch derart akribisch und detailfixiert, dass sie ganz bestimmte Geschmackserlebnisse erschaffen, mit ganz besonderen Feinheiten und aromatischen Nuancen. Im Tastillery-Shop haben wir Euch einige der spannendsten Exemplare dieser liquiden Handwerkskunst zusammengestellt. Keine Panik, wir haben darauf geachtet, dass die meisten davon bezahlbar bleiben, aber genau die hohe Qualität widerspiegeln, für die japanischer Whisky steht. Natürlich ist auch das eine oder andere Sammlerstück aus Japans 100jähriger Whisky-Geschichte dabei. Alles beginnt 1923: Ein Mann namens Shinjiro Torii hatte den hiesigen Sake- und Shōchū-Markt bereits erfolgreich mit seinen japanischen Weinen aufgemischt und wollte sich jetzt an Whisky probieren. Sein wichtigster Verbündeter dafür? Masataka Taketsuru, der sich in Schottland zum Master Distiller hatte ausbilden lassen. Eigentlich möchten sie mit ihrer Distillery weit oben in die japanischen Berge, wo ein ähnliches Klima herrscht wie in Schottland – am Ende wird es aber ein kleiner Ort nahe Osaka – Yamazaki. Kennt Ihr? Das liegt daran, dass die Yamazaki Distillery auch heute noch zu den Big Two der japanischen Whisky-Destillerien gehört. Die andere? Gründete Master Distiller Taketsuru höchstselbst, nachdem er Yamazaki verlassen hatte – und sie hört auf den Namen Nikka.\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eVon beiden findet Ihr diverse Whiskys im Tastillery Shop, in den letzten 100 Jahren ist die japanische Whisky-Welt aber enorm gewachsen, viele kleinere Brennereien schossen aus dem Boden. Genau wie die großen Vorbilder orientierten sie sich handwerklich an Schottland und siedelten sich nach Möglichkeit in ähnlichen klimatischen Bedingungen an. Bis in die 2000er hinein galt japanischer Whisky trotzdem nur als Produkt für den heimischen Markt, im Westen fand er wenig Anklang. Das änderte sich schlagartig als Mitte der 2000er gereifte Whiskys von Nikka und Suntory – dem Unternehmen hinter der Yamazaki Distillery – reihenweise Preise einheimsten und Spitzenplätze bei den World Whisky Awards belegten. Gemälzte Gerste wird auf Pot Stills doppelt destilliert und in ausgewählten Ex-Bourbon-Fässern gelagert. Wegen der hohen Nachfrage kommen die meisten Japanese Whiskys inzwischen allerdings ohne Altersangabe auf den Markt, viele davon sind nicht deutlich älter als die gesetzlich vorgegebenen drei Jahre, die Whisky mindestens in Holzfässern reifen muss.\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eEinen großen Vorteil haben die Japaner dabei allerdings: schon immer setzen sie weniger auf Single Malts als vielmehr auf perfekt austarierte Blends. Erfahrene Master Blender kitzeln auch aus jüngeren Destillaten feingliedrige Aromen und komplexe Geschmacksnuancen, für die Whiskys aus anderen Ländern durchaus mal ein paar Jahre länger brauchen. Den trinkt man hauptsächlich zum Essen – wobei er seit den 70ern auch gerne mal durch japanischen Whisky ersetzt wird. Dabei wird der Whisky am Tisch je nach eigenen Vorlieben mit stillem Wasser verdünnt. Nimmt man dafür kaltes Wasser, spricht man von Mizuwari, setzt man im Winter dagegen auf heißes Wasser heißt das Oyuwari.\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eGerade in den trendigen japanischen Bars setzt man allerdings auf eine modernere Interpretation als Highball, für die man statt stillem Wasser Soda verwendet. In den High-End-Bars Japans wird der „Mizuwari Highball“ beinahe rituell gemixt: Auf handgeschnitzten Eiswürfeln wird der Whisky genau 13 ½ mal gerührt, das Sodawasser wird hinzugefügt und erneut gerührt, genau 3 ½ mal.
